Raw Banana Macadamia Cream Pudding

I made this last night for my family and we loved it!  Its a decadent and rich sweet treat that falls well within the confines of a raw only diet. 


Raw Banana Macadamia Cream Pudding

4 bananas
1 cup macadamia nuts
1/3 cup dates (I soaked mine for about 45 minutes before hand)
1 teaspoon vanilla
2-3 tablespoons of water from soaking dates

Mix all ingredients in blender - serves four.  You can also add cacao powder for a fudge-like chocolate version.  Next time I make this, I'll try it as a pie filling with a raw date and nut crust!  You can also make it into a parfait as in the image below.

Hi Sarah, I found you today as I'm hunting for delicious raw recipes and I'm your newest follower. I've lost 45 pounds this year (mostly by doing a 60 day juice fast in the spring) and am determined to keep off the excess weight. A little "wrench" in my plan...I just discovered last week that I am expecting my 11th child (I'm 48 years old)! We are thrilled! But I am hungrier than usual, so I'm wanting to fill up on the right things (raw). This recipe sounds divine and I can't wait to try it out!

Chana - the parfait beyond the pudding part? Yes. Chopped macadamia nuts, dates and crisped buckwheat that a friend had given me. She had made the buckwheat with her dehydrator. But it would also be good with chopped cashew or pecans and raisins too!
